Besan Ka Poora / Cheela (Gram flour pancake)

ADD

  • Gram Flour

  • Salt

  • Red chilli powder

  • Fenugreek

  • Soda bicarbonate

  • Ghee (preferred) or you may use oil if you prefer
    vegan version.

 

INSTRUCTIONS
Take bowl to weigh your flour and put all the spices in the bowl. Give it a dry mix with a whisk. Take a jug of room temperature water and pour to make a pancake batter like consistency. Whisk till smooth and leave it aside.

 

Vegetable fillings for Poora

  • Pepper, slice medium thickness

  • Red Onions – thin slices

  • Green chillies, finely chop

  • Paneer, diced in small cubes

  • Coriander for garnish

  • Salt for seasoning

  • Chaat masala – sprinkle for flavour.

 

Making a Poora

Oil the pan with ghee generously. and put it on high flame to smoke. Soon after smoking reduce the flame to medium. Wait for 60 seconds and pour just like a pancake. Make sure the batter is evenly spread on the pan. Cover it for a minute or so (keep checking if you can see the batter leave the edges. 

 

Take a spatula or a fish slice and turn the poora over and cook evenly for next minute or so. Slide the poora in a plate to serve.

Poora filling
Mix all the cut vegetables and paneer in a bowl. Sprinkle with chaat masala and salt to taste. Pour some ghee on a pan and saute for 30-45 seconds on a high flame. Pour the vegetable on the poora.

Fold it and enjoy with a mint chutney on the side.

Simple mint chutney recipe
Ingredients:

  • Mint

  • Coriander

  • Onions

  • Ginger

  • Garlic

  • Green chillies

  • Lemon

  • Salt

  • Chaat masala

 

Squeeze the lemon for juice. You can also use the zest if you like as it adds to the flavour. Blend the ingredients 1-6. Add salt to taste and flavour with chaat masala. Enjoys with you poora.

 

Add some cold pro-biotic yoghurt to make mint raita.
